Pierre Robert

Cher Pierre,

I'm terribly sorry it has taken me so long to express my love for you. My mind has been elsewhere and I now realize the error of my judgement.

When I first saw you, you looked like all the others. You had no distinguishing marks, your dress was unoriginal, you didn't even smell pungent. Why should I have paid any attention?

I let you wait, day after day, which only allowed you to age that much more delicately. You were patient and kind. You did not sour, you did not grow bitter. Then finally, on a lonely night, I thought of you. Yes, the time was now. I needed you.

I held you for a moment and admired your creamy flesh beneath your wrap. Then I slowly undressed you, careful to keep your shape intact.

At first, I was too distracted to notice how incredible you were. So I tuned out the rest of the world and focused all my attention on your taste, texture and decadence.

It is hard to put into words the excellence that you were. Your masterfully subtle scent allowed the magnificence of your texture to reign. Buttery like no butter could be. Creamy like no cream could dream of. A veritable taste bud's fantasy.

There should be a new name for something like you. For you are so much more than cheese. You began as a simple thank you gift from my husband, but became the love of my night.

Pierre Robert is a fantastic cheese. I like D'affinois, too - it is a good, soft cheese.

I found your blog through Bev - enjoyed the entry.

Yes, brie is a bit disappointing now.

I hadn't planned out much of a pairing. I'm not the best at that. I had some Pinot Grigio beforehand, but to be honest I couldn't concentrate on anything but the cheese once I tasted it. Do you have a recommendation? I'd love to have it next time with a proper wine.

Pierre Robert is great with a good champagne.

A Kabinett or a Pinot Blanc would probably go well with it, too.

Pierre Robert gets me to drink whites when I lean heavily toward reds. :)

I'm thinking about who I'd invite to my dinner party (from a December entry you did, I believe). I think I'd like Dorothy Parker, as well. If for no other reason than to put her martini quote to the test:

I like to have a martini,
two at the very most -

at four, I'm under the host.

Epoisses is good - I sort of prefer Affidelice since it is just a touch more mild. :) It's another washed rind cheese. Good with a pinot noir.

You guys are quite the cheese fiends.

We usually have a wine and cheese party every year.

Angie, you'll have to come this year! Robin brought a yummy cheese last year - can't remember what it was.

We're also now hooked on Sharecroppers because of you guys :)
